Are you bored with your usual salad?  Looking for a quick and easy way to add some veggies to your meal?  Try this super easy salad with cucumbers, tomatos and peppers.  It only takes a couple minutes to make, so you can whip it up in a flash.

colorful saladThe simple dressing enhances the flavors of the veggies, but still lets them shine through. You get a nice crunch from the peppers and the tomatoes add a bit of sweetness, making it a great lunch or dinner addition.  Plus it’s so pretty you will love having it on your plate!

Cucumbers have lots of vitamin K and lignans, which may help prevent cancer and heart disease.  Tomatoes have anti-inflammatory properties plus lots of vitamins A, C, and E, and bell peppers have potassium and carotenoids which are beneficial in preventing heart disease as well.  So eat up this colorful salad and do your body some good!

Ingredients

1 bell pepper (I like yellow or orange)
1 small cucumber
1-2 tomatoes, depending on size

Olive oil and balsamic vinegar for drizzling
Salt and pepper

 

1. Chop up the veggies and place in a bowl. (You want approximately equal amounts of each, but it might vary a bit depending on the size of your vegetables)

2. Drizzle with a bit of olive oil and balsamic vinegar.  Add some salt and pepper to taste.
